oh, hello monday, my arch nemesis... sigh. the day isn't even half way over and i'm already over it lol. woke up on the right side of bed. i was in surprisingly good spirits for a monday. not even 30 minutes into my shift i get hit hard with a less than enjoyable exchange of sorts. i'll just leave it at that since it be wouldn't be in the best taste to go off on a rant here.
anyways, i can't wait for 5:00 to roll around. go time. and gym time. chest and tri today.
had a very productive night, last night. prepped breakfast, lunch and snacks for my work week. it's silly, but it feels really good knowing that i don't even have to give a second thought to eating. no stressing about trying to find healthy alternatives at work. or worrying about my snack tooth. it's all planned. :)
found a new gem at Trader Joe's while doing my weekly shopping. Better'n Peanut Butter. i've seen it recommended on so many of the blogs i follow, but have just never found it. well there it was, just sitting on the shelf waiting for me to scoop it up. i can safely say that i'm addicted. it has all the flavor of peanut butter with a creaminess that's to die for, minus the whopping fat and calories. what's not to like? no really?!
also took a little "me time" and rolled out my hammies. guess i went a little crazy on leg day because my left hamstring is super tight and sore. not in a pulled muscle or painful way, but more of the walk-like-a-stiff-old-lady kind of way.

i felt pretty drained by the end of my work day. i could've slept all evening. or vegged. that's how pooped i was. but i dragged my bum to the gym. gotta shake those monday blues off somehow! today was chest and tri.

and now... it's dinner time! just popped my tofu out of the oven and am waiting for it to cool off. made a really simple marinade using a bit of safflower oil, a bit of reduced sodium soy sauce, mrs. dash garlic & herb, and just a dash of natural honey. so simple, yet it has so much flavor. now i just need to heat up the crockpot sweet potatoes i cooked up last night, and it's grub time! :)
